Olive Garden Restaurant Recipes: White Bean Salad with Tomatoes and Pancetta

Once in a while, going vegetarian is a nice change of pace. Try this simple to prepare salad from Olive Garden Restaurant recipes.

This dish takes 15 minutes to prepare and 45 minutes to cook.

Ingredients:

  • 2 19-oz cans white kidney-cannellini-beans, rinsed well
  • 1/4 cup + 2 Tbsp extra virgin olive oil
  • 1/4 cup uncooked pancetta, sliced and chopped
  • 1/2 cup yellow onion, 1/4″ diced
  • 2 tsp rosemary, finely chopped
  • 3 Tbsp red wine vinegar
  • 1/4 cup tomatoes, diced
  • 1/2 tsp salt
  • pinch ground black pepper
  • 3 Tbsp Parmesan cheese, grated
  • 1 Tbsp fresh basil, chopped

Instructions:

  1. Heat the olive oil in a sauté pan.
  2. Add pancetta and slowly cook it over medium heat until it’s crispy.
  3. Add the onion and continue to sauté.
  4. Add rosemary and cool for 1-2 minutes.
  5. Remove from heat.
  6. Mix the tomatoes, red wine vinegar, salt, pepper, Parmesan, basil and 1/4 cup of olive oil in a bowl.
  7. Add the hot pancetta and onion mixture and allow to cool.
  8. Add the beans to the mixture and serve at room temperature.
  9. For extra flavour, add grated Parmesan cheese and drizzle a little olive oil on top.
