Olive Garden Restaurant Recipes: Cheese Ravioli with Fresh Vegetables

Fancy a quick meal of ravioli for dinner? Here’s a quick Olive Garden Restaurant recipe which you can prepare and cook in just 25 minutes. You’ll be able to eat a healthy, delicious meal no matter how packed your schedule is. You don’t need to spend all day shopping for the ingredients either! Most of what you need are common everyday household items – olive oil, garlic and chicken broth.

Ingredients:

  • 1 lb mini round cheese ravioli, cooked according to package directions
  • 1/4 cup extra virgin olive oil
  • 1 clove fresh garlic, chopped
  • 2 7-oz jars roasted red peppers, sliced in strips
  • 1 whole, medium fresh zucchini, sliced in half moons
  • 1/2 cup black olives, sliced
  • 1 cup chicken broth
  • Grated Parmesan to taste
  • Fresh chopped parsley for garnish
  • Salt and freshly ground black pepper

Instructions:

  1. Cook ravioli according to package instructions.
  2. Heat the olive oil over medium heat in a saucepan.
  3. Add the zucchini moons, garlic, black olives and red peppers.
  4. Stir and cook for two minutes before adding chicken broth.
  5. Let simmer for two more minutes and then season with salt and black pepper to add extra flavour.
  6. Drain the cooked ravioli and add a small amount of olive oil to prevent sticking.
  7. Combine ravioli with sauce and blend well for maximum flavour.
  8. Add grated Parmesan cheese and parsley.
  9. Serve, eat and enjoy.
